Jelly frosting! It takes 30 seconds to put together and 5 minutes of whipping. You can make it any flavour you like and if you use a jelly base that uses natural colour and flavour, it is way healthier than any other frosting you will make.

To make this you will need:
1 packet of jelly - any flavour
1 egg white
2/3 cup castor sugar
1 teaspoon of vanilla - you could also use a flavour extract to get a more intense flavoured frosting
1/2 cup boiling water
- Place jelly, egg white, sugar and flavouring in the bowl of a stand mixer fitted with the whisk attachment.
- Start whipping on high speed as you add the boiling water.....stand back, it splashes.
- Continue whipping until the mixture has cooled and it resembles a thick delicious fluffy cloud.
- Pipe onto cupcakes immediately.
Note: This frosting does not keep well. Any excess should be discarded and cakes should be iced the day of consumption.
