Jelly Frosting

This is by far the coolest recipe I have come across in a long time!

Jelly frosting! It takes 30 seconds to put together and 5 minutes of whipping. You can make it any flavour you like and if you use a jelly base that uses natural colour and flavour, it is way healthier than any other frosting you will make.

McMassive thanks to Coleen for posting this recipe. I can't wait to try creaming soda flavoured.....the latest jelly flavour on the shelf! Jump on over to Coleen's page to see all of her amazing creations!

To make this you will need:

1 packet of jelly - any flavour
1 egg white
2/3 cup castor sugar
1 teaspoon of vanilla - you could also use a flavour extract to get a more intense flavoured frosting
1/2 cup boiling water

  • Place jelly, egg white, sugar and flavouring in the bowl of a stand mixer fitted with the whisk attachment.
  • Start whipping on high speed as you add the boiling water.....stand back, it splashes.
  • Continue whipping until the mixture has cooled and it resembles a thick delicious fluffy cloud.
  • Pipe onto cupcakes immediately.

Note: This frosting does not keep well. Any excess should be discarded and cakes should be iced the day of consumption.
